Appellation and Name of the wine: Vin Santo del Chianti DOC Castello del Trebbio
Grape Varietal: Trebbiano 70%, Malvasia 30%.
Nr. of Bottles: 3000.
Type of soil: medium loam with rocks and limestone matrix.
Density: 5500 stocks per hectare.
Pruning system: Guyot.
Harvest: by hand with accurate selection of the clusters, choosing the healthiest and less compact
Period of withering: about 5 months in a ventilated room, on mats.
Vinification: when grapes reach the right sugar concentration, they get pressed and the grape must gets in small barrels (caratelli) to start the fermenting and then aging process.
Refining: in small barrels (caratelli) for 5 years.
Aging potential: over 30 years. Long shelf life wine.
Tasting notes: bright amber color. In the nose it recalls aromas from date to saffron and barley candies. Well balanced in the palate, fresh and delicately sweet with hints of caramel, coffee and hazelnut.
Recommended pairings: dry pastries, chocolate cakes, aged cheeses, Tuscan cigar.
Serving temperature: as a dessert wine, between 14°C and 16° C.
