Appellation and Name of the wine: Toscana IGT Pazzesco Castello del Trebbio, single vineyard.
Grape Varietal: Merlot 100%.
Vineyard surface and produced bottles: 3 hectares, 8.000 bottles.
Type of soil: mainly loam with good marl matrix
Year of planting: 1998
Density: 5500 stocks per hectare.
Pruning system: low spur pruned cordon
Yield: 8 clusters per vine.
Harvest: by hand, in small crates.
Vinification: after further selection on the table, we continue with de-stemming followed by gentle pressing. Fermentation happens in stainless steel vats for about 30 days. Malolatctic fermentation follows in barrique.
Aging and refining: first refining in new barriques for 18-20 months. Second refining in the bottle for 12 months
Aging potential: over 20 years.
Tasting notes: red with intense reflexes, it shows fascinating aromas of small red berries with spicies hint. In the palat rich and velvet taste with well balanced tannins and a long, pleasant, persistant finish
Recommended pairings: thanks to its intense aromas and rich structure , it combines very well with roasted and stewed meat .
Serving temperature: 16°C in summer; 18°C in winter.
