Appellation and Name of the wine: Toscana IGT Congiura Castello del Trebbio
Grape Varietals: Pinot Grigio 50%, Riesling 40%, Manzoni Bianco 10%.
Vineyard surface and produced bottles: 3 hectares, 12.000 bottles.
Type of soil: medium loam with rocks and limestone, good drenage capacity.
Year of planting: 2005.
Density: 5500 stocks per hectare.
Pruning system: Guyot.
Yield: about 6000 kg.grape per hectare.
Harvest: by hand, in small crates with technological maturation .
Vinification: Once arrived in the cellar, the grape get de-stemmed and placed into the pneumatic press. Then later, the clarified must get assembled in stainless steel and vinified 50% in steel and 50% in tonneaux under controlled temperature.
Aging and Refining: about 50% in stainless steel tanks for 6 months and the rest in tonneaux, also for 6 months. 3 more months refining in the bottle.
Aging potential: 5-7 years. Fresh and very pleasant when it’s young, it gains a great complexity with aging.
Tasting notes: in the nose it reveals minerality with notes of apple, plum and peach, acacia flowers and hawthorn. In the mouth is fresh, round and persistent.
Recommended pairings: ideal with fresh cheese, well seasoned white meat, pasta with clams.
Serving temperature: 8°C-10°C.
